It is considered the most historic in Greece and perhaps the oldest in Europe. The secret lies in its unique ecosystem. The soil, the climate, the sea and the volcano, which last became active in the 50s with its hot breath, have shaped this unique island. Let's not forget the underwater volcano in Columbus. This special climate and volcanic soil protect the vines from diseases, insects and fungi. In this way, diseases that have destroyed all the vineyards in the world have not been able to harm the vineyards of Santorini. So the grapes harvested today are the same ones that our ancestors harvested. The vineyards may be 60 to 80 years old, but their root system dates back to ancient times. In addition, the winemakers of Santorini have adopted and perfected an ancient pruning technique called “kouloures”. The vines are pruned in the form of low, spiral baskets in which the grapes hang to protect them from strong winds. The crowning glory is a black sand beach that is decorated with small lilies in mid-August. The same lilies can also be seen on the wall paintings in Akrotiri in prehistoric Thera.
